Gertrude & Rose is a small-batch fermentation venture based in Montreal. Their products are "not cooked, pasteurized, canned nor heated. They are the end result of wild fermentation, which transforms fruits or vegetables into tangy, lacto-bacilli-rich snacks and condiments, using just a bit of salt and some elbow grease."
